As I am searching around your blog, my hubby looked over my shoulder and saw this recipe and wants to try these. Lucky for him its his birthday tomorrow so I was planning on making him a special birthday breakfast, which was going to be bacon and eggs, but this is a whole lot simpler :) Thanks!!
This looks like a good idea, except I'd leave out the cheese for some since my nephew and I are allergic. Having something like this that is already split into portions would be good for a potluck or brunch where everyone brings items to share.

Yum, those look good. I love muffin tin meals, because they are one pan and not tons of dishes to clean after!
