Recipes

Here is the first Recipe of (I hope)many! As some of you know my father is Cuban and mother is Mexican thus giving way for a very rich culinary tradition in my family. The following is one of my personal favorite recipes. This one is called Picadillo. It is the Cuban version of ground beef. It can be served with white rice,or my personal favorite pasta or between bread like a sloppy joe. Enjoy!

Cuban Piccadillo
  • 1 lb. ground beef
  • 1 tsp. oregano
  • 1 tsp. cumin
  • 4 gloves garlic, minced
  • 1 med. onion, finely chopped
  • 1 sm. green pepper, chopped
  • 3/4 c. tomato sauce
  • 2 sm. potatoes, peeled and diced
  • 8-10 green pimento stuffed olives
  • 1/3 c. raisins
  • Salt and pepper, to taste
  • 2 T olive oil
In a mixing bowl, combine the ground beef, oregano, cumin, salt and pepper. In a pan, heat the olive oil. Saute the onions, green pepper and garlic until soft. Add the ground beef and tomato sauce. Cover and cook over low-medium heat for 15 minutes. Add the diced potato. Cover and cook for another 15 minutes or until the potatoes are done. Remove cover. Add olives and raisins and cook uncovered for 15 minutes or until the liquid is fully evaporated but meat is still moist. Serve with fluffy white rice,pasta ,or even between bread like a sloppy joe. Buen Provecho!

I've had Piccadillo a few times as my brother-in-law makes it every now and then when we come for dinner. He doesn't use raisins though and I'd really like to try it like that- sounds yummy :)
